Coconut Apricot Nuts Energy Peals

About the Recipe

Energy pearls are a healthy quick pick me up when you are on the go. They are also great for breakfast or for your tea break and they are a lot more healthy than store bought muesli bars which are loaded with sugar.

When you do your own energy pearls you can choose how sweet you like them and you can easily replace the apricots with dates and have fun with changing up the nuts.

Ingredients

  • 1/2 cup dried apricots unsulfured (7 to 8 pieces depending how sweet you prefer them)

  • 1/2 cup raw organic cashews or other nuts (e.g. Pecans, Almonds)

  • 1/2 cup unsweetened shredded coconut

  • 1 drop of Young Living vitality lemon essential oil

  • 2 tablespoons water

  • A pinch of sea salt

Preparation

Step 1


Mix all ingredients together in a food processor or blender and blend for one to three minutes.



Step 2


Remove from the blender or food processor and put mixture in a bowl. Using your hands or a tablespoon, scoop a bit and roll it into a ball. The above gives about 8 to 10 balls depending on the size of them



Step 3


Place them in the fridge for at least 30 minutes before consuming them.
